Don’t give into temptation today, make yourself some healthy protein pancakes easy peasy and a lot less calorific.
3 whole eggs
1 cup rolled oats I like to grind the oats in a blender
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon gound nutmeg
1 scoop of vanilla protein powder
3/4 cup greek yoghurt
1/4 cup of your choice of milk (coconut, almond or dairy)
Combine all the ingredients in a blender you may be required to add water if the mixture is too thick.
Heat the pancake pan and melt a small amount of coconut oil into the pan. Spoon in the mixture to create the required thickness.
Turn down the heat and cook over a low heat, flip over and cook until golden brown.
Serving suggestions: serve with berries and greek yoghurt, nut butter and banana or maple syrup and enjoy.
