One of my favourite treats are waffles but I can’t say I’m fond of the calories that come along with them. So I started looking at ways of getting a healthier version of my much loved treat. This recipe for oat waffles is derrived from my oat crepe recipe, still a family favourite, but I started to make in waffle form after purchasing a waffle maker from Lidl for just €19.99 recently.
When I’m looking for a sweet treat I just add some nut butter, berries or some maple syrup but they are equally as good unsweetened with some scrambled eggs and avocado. They even get the seal of approval from my 3 year old!
Oat Waffles
Serves 4
- 1 Cup organic oats
- 2 eggs
- 2 tablespoons Greek 0% Fat yoghurt – try Fage (can be made without)
- Dash of milk of choice
- Cinamon (optional)
- Stevia (optional)
- 3/4 Cup Water
Blend all the ingredients together I use a nutri bullet to form the mixture adding extra water as required. Texture will be similar to usual pancake batter.
On a hot waffle pan add a quarter teaspoon of coconut oil wiping off any excess with paper towel. Spoon or pour out mixture on waffle pan. Allow cook for a few minutes until lightly golden.
