Coconut Pancake Recipe

Another one of our favourite pancake option at BodyByrne.

Pancake recipe:

  • 2 eggs
  • 2 tbsp Coconut Oil
  • 5 tbsp Almond milk (unsweetened)
  • 1 ½ tbsp sweetener or Agave syrup
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp Coconut Flour
  • ¼ tsp baking powder
  • 1 tsp cinnamon

 

Method:

  1. Blend together eggs, oil, milk, sugar,vanilla extract and salt.
  2. Combine coconut powder with baking powder, cinnamon and throughly mix into batter.
  3. Leave the pancake batter to stand for 5 mins while your pan heats.
  4. Lightly grease a frying pan with a little bit of coconut oil, add the batter and cook until set and lighty golden.
  5. Serve with your favorite fruit slices, berries or add some Highbank Organic Orchard Syrup.
