Another one of our favourite pancake option at BodyByrne.
Pancake recipe:
- 2 eggs
- 2 tbsp Coconut Oil
- 5 tbsp Almond milk (unsweetened)
- 1 ½ tbsp sweetener or Agave syrup
- ½ tsp vanilla extract
- ¼ tsp salt
- 2 tbsp Coconut Flour
- ¼ tsp baking powder
- 1 tsp cinnamon
Method:
- Blend together eggs, oil, milk, sugar,vanilla extract and salt.
- Combine coconut powder with baking powder, cinnamon and throughly mix into batter.
- Leave the pancake batter to stand for 5 mins while your pan heats.
- Lightly grease a frying pan with a little bit of coconut oil, add the batter and cook until set and lighty golden.
- Serve with your favorite fruit slices, berries or add some Highbank Organic Orchard Syrup.
