Of all the things that come and go in my diet one thing I always have a stock of is eggs and I rarely get tired of them. They are so versaltile, healthy and quick I just can’t see being without them.
They are a rich high quality protein and loaded with vitamins and minerals.
One whole egg provides approx 75 Calories and I have no hesitation in having 2-3 per day. If you want to reduce the calories simply opt for a full egg with extra whites but remember a full egg has all the essential amino acids so make sure to keep a full egg in your diet.
You are more likely to go off eggs by either overcooking them or rushing them so take your time cook them on a low heat and check out my 4 Favourite ways to have eggs.
The Healthy Eggs Florentine – Serves 2
- 2 Eggs
- 1-2 Slices of whole meal or Sourdough
- 1 handful baby spinach cooked
- 5 desert spoons of Greek Yoghurt
- ½ Teaspoon Mustard (Dijon works well)
- 1 Fresh Lemon
- Pinch of Cayenne Pepper
- Salt and Pepper to taste
Cook 3-4 handfulls of spinach in a small amount of water. While that’s cooking poach 2 eggs.
In a saucepan add all your other ingredients and lightly heat on low for 3-4 mins mixing.
On toasted bread add the cooked drained spinach then the eggs and the sauce.
Huevos Rancheros
- 2-3 Large Eggs
- 1 Tin of Chopped Tomatoes
- 1 Red Onion
- 1 Teaspoon Paprika
- 1 teaspoon of fresh or dried Oregano
- 1 Small Clove Garlic
- 1 Red Pepper
- 1 small Chili
- 1-2 Tomatoes
- 1-2 Bay Leaves
My Take on the Mexican breakfast and this is a great Sunday Morning treat.
Simply lightly fry a red onion with red pepper then add the garlic and fresh tomatoes. When slightly browning add a can of tin tomatoes. Add the paprika and bay leaves and allow simmer. When simmering make space for your desired amount of eggs and crack them into the tomato mixture. I like this served simply with some sliced avocado.
- 2-3 Large Eggs
- 1 Tablesoon Tomato Salsa
- 1 Wholemeal or Spinnach Wrap
Simply scramble 2-3 Large Eggs, when almost cooked lightly heat your wrap. Coat the wrap with desert spoon of Tomato Salsa and add the eggs on top. Then wrap it up like a burrito.
This recipe is the basic version but you can pimp yours up adding avocado, spinach etc Its all good.
Poachy Fried
So I’m not a lover of a fried egg as I don’t like the white crispy so I started doing a poachy fried egg a happy medium between both poached and fried.
Simply pan fry a large egg in a non stick pan as the white start to cook add a small amount of boiling water to stop the whites edges from crusting and cook to you liking.
